Method
Prepare Pumpkin
- Wash the exterior of the pumpkin in cool or warm water, no soap.
- Remove (and save) the seed and scrape the insides getting out all the stringy fibers that coat the inside of the surface.
- Cut the pumpkin into slices and then into manageable sized pieces to fit your pot.
- Steam the pumpkin pieces in a double boiler for 20 to 30 minutes. After 15 minutes check to see if the pumpkin is soft.
- Once soft, remove from steamer and remove the skin from the meat. If soft enough, the skin should peel off fairly easy.
- Scrape the leftover meet from the skin with a spoon.
- If the pumpkin is standing in free water, let stand for approximately 30 minutes and then drain excess water to prevent the mixture from becoming too watery.
- Puree the pumpkin in a bowl using a staff mixer or blender until smooth.
Pie Filling
- Combine all ingredients into large bowl and mix well using a hand blender or mixer.
- Pour the mixture into a prepared pie crust.
- Bake at 425°F or 210°C for the first 15 minutes then turn the temperature down to 350°F or 175°C and bake another 45 to 60 minutes, until a clean knife inserted into the center comes out clean.
- Cool on cooling rack.
